Today I have some good friends visiting me and helping me out while I recover from surgery. They are foodies just like me. We decided to try out a few new RAW recipes. The recipe that realy caught our eye was one sent over from our good friend, and blogger at cupcakeandsunflowers. It was a recipe for RAW Pad Thai Salad.
We all agree that it is a keeper and we would definlaty make it again. My friends would add Chicken or Tofu to it next time, I opted to add red pepper flakes for a little spice and some kick.
I would like to add a little something sweet to it... what I'm not sure, but just to go with the little bit of spice.

RAW Pad Thai Salad
Prep Time: 15 minutes (we think this is a bit of a lie)
Total Time: 15 minutes
2 Zucchinis- Sliced into strips with a vegetable peeler
2 Large handfuls of Bean Sprouts Aprox 2 cups
3/4 Cup chopped nuts (almonds, peanuts, or cashews)
1 red or yellow bell pepper sliced into strips
4 green onions diced
1/2 cup chopped cilantro
juice from 1 Lime about 1 TB spoon
1/4 teaspoon olive oil
Toss all ingredients together in a bowl until well coated. Add a dash of salt and enjoy!!
